Carrot Souffle
1 pound carrots, peeled, chopped
1/2 c. sugar
1 t. baking powder
1 t. vanilla extract
3 T. flour
3 eggs, beaten
1/2 c. (1 stick) butter or margarine (softened)
Confectioners sugar
Combine the carrots with enough water to cover. Bring to a boil; boil until very tender, drain. Combine the hot cooked carrots, sugar, baking powder and vanilla in a mixer bowl. Beat until smooth. Add the flour and mix well. Add the eggs and mix well. Add the margarine and mix well. Pour into a 9x9 inch baking dish coated with nonstick spray.
Bake at 350 degrees for 45 minutes or until top is a light golden brown; do not overbake. Sprinkle lightly with powdered sugar (I skip this as it is already sweet enough!). Serve warm. Yield: 6 servings
I usually double this and there are hardly ever leftovers!

Wow I've never heard of this. Does it taste like carrot cake and is it a dessert? I'll have to try it.
This has the same ingredients(except the carrots) as a sweet potato dish we have at Thanksgiving
sounds yummy
Blessings for a wonderful Thanksgiving week to you!
This does sound like a dish we have with sweet potato's, too. Does it taste like carrots? I think we'll try it, if it is your son's favorite.
I got your gift today!! I will post it tomorrow. Everything is wonderful! Thank you for all of your kindness!
Sounds kind of yummy...might have to give this one a try. I'm excited about the charger....thank you so much for finding one for me. You're the best.
I'll have to take your word for it; we prefer yams though we do like carrots. But I must say you have the nicest recipe book holder I've ever seen!
Happy Thanksgiving!
Debbie
Hmmmm....sounds interesting. May have to give that a try.
Thanks!
Gotta have those favorites. Sounds like a good one!
We had something like this last year at our Ladies' Thanksgiving luncheon and I can tell you it was the HIT at the buffet!! I love how you say "Of course, I'll make it." We moms will do anything for them, right? Enjoy!
This sounds delicious! No wonder it's your son's favorite.
I forgot to wish you a Happy Thanksgiving!
What a fun recipe. I have never made it - it sounds good!
Happy Thanksgiving!
XOXO

Hi, Suzanne ...
Just stopping by to wish you and your family the best Thanksgiving celebration ever!
Your carrot souffle sounds delicious. We're having a Christmas party and I've been looking for new recipes to try. Your souffle sounds perfect!
Sincerely,
Janie
That sounds like a delicious recipe. :)
Thanks so much for stopping by my blog. I hope you have a wonderful Thanksgiving. :)
Sounds very yummy!
Just read your post from yesterday too. Yes I finally realized no one was coming over, out of the clear blue sky. They were all busy living life. Yes I realize that. I have been head of Santa's workshop all week and will be until Christmas. I am so pleased with all my projects. Can't share til after Christmas. Happy Thanksgiving to you and your family from our gang here.
